My husband watched me pour the sweetened condensed milk over the top of the pan and told me, very sure of himself, that it was never going to hold together. Not stirred, not mixed, just poured over a pan of dry things and slid into the oven. My mother made these magic cookie bars for every reunion, every bake sale and every birthday, and nobody ever saw her stir a thing. In the oven the milk sinks down through the layers, the edges caramelize, the coconut toasts on top and the chocolate melts into everything, and when it cools it sets into chewy, gooey bars that hold together perfectly.
They go by a dozen names, seven layer bars among them, but the method never changes, and there are only two ways to get them wrong: pulling them out too soon so they stay runny, or leaving them in too long so the bottom turns hard. Here is the full recipe, and exactly how to tell when the bars are done.
Why this magic cookie bars works
- A buttery crust. Graham crumbs and melted butter pressed firm make a base that holds up the gooey layers.
- Dry layers. Chips, coconut and nuts scattered loose let the milk seep down between them and bind every layer.
- Poured, not stirred. A slow zigzag of condensed milk covers everything evenly and sinks in as it bakes.
- Golden edges as the signal. The bars are done when the edges are golden brown and the center is just set, not when the middle looks firm.
- Cooled completely. The milk sets as it cools; cut warm, the bars fall apart.
Ingredients
Makes one 9x13 inch pan, 24 bars. The measurements are in US cups with grams in brackets.
For the crust
- 1 1/2 cups graham cracker crumbs (150g), from about 10 full sheets
- 1/2 cup unsalted butter, melted (113g)
For the layers
- 1 can sweetened condensed milk (14 ounces, 397g)
- 1 cup semisweet chocolate chips (170g)
- 1 cup butterscotch chips (170g), or more chocolate chips
- 1 1/3 cups sweetened shredded coconut (110g)
- 1 cup chopped pecans (115g)
The original version uses only chocolate chips; butterscotch chips are how my mother made them, and they are where the seven layer name comes from. Walnuts work in place of the pecans.
How to make magic cookie bars
- Heat the oven to 350 degrees (175°C), or 325 degrees (165°C) if your 9x13 pan is glass. Line the pan with foil or parchment, leaving the ends hanging over as handles, and grease it.
- Stir the graham cracker crumbs and melted butter together until all the crumbs are moist. Press firmly and evenly into the bottom of the pan.
- Scatter the chocolate chips evenly over the crust, then the butterscotch chips.
- Pour the sweetened condensed milk slowly over the chips in a zigzag, then back the other way, so it covers as much of the surface as you can, right to the corners. Do not stir or spread it.

- Scatter the coconut evenly over the milk, then the pecans. Press everything down gently with the flat of your hand.
- Bake for 25 to 30 minutes. They are done when the edges are golden brown and bubbling, the coconut on top is lightly toasted, and the center no longer looks wet when you gently shake the pan.
- Cool completely in the pan on a rack, at least 2 hours, or overnight.
- Lift out by the foil and cut into 24 bars with a sharp knife, wiping the blade between cuts.

Tips that make the difference
- Press the crust firmly with the bottom of a measuring cup so it does not crumble when you cut.
- Get the milk all the way to the edges and corners. Anywhere it does not reach stays dry and loose.
- Watch the edges, not the middle. Once the edges are golden brown the center will set as it cools.
- For the cleanest squares, chill the cooled bars for 30 minutes before cutting.
Variations
- All chocolate. Use 2 cups chocolate chips and skip the butterscotch.
- Peanut butter. Use peanut butter chips in place of the butterscotch.
- Nut-free. Leave out the pecans and add another 1/2 cup coconut.
- Cookie crust. Use chocolate cookie crumbs in place of the graham crackers.
Storage and make-ahead
Keep the bars in an airtight container at room temperature for up to 5 days, with parchment between the layers.
They freeze very well for up to 3 months. Thaw at room temperature.
In a warm kitchen, store them in the refrigerator so they stay firm.
Frequently asked questions
Why are my magic cookie bars runny?
They came out of the oven too soon or were cut while warm. Bake until the edges are golden brown and cool them completely before cutting.
Why is the bottom hard?
They baked too long, or in a dark or glass pan at too high a heat. Check at 25 minutes and lower the oven 25 degrees for glass pans.
Do I really not stir it?
Really. The milk finds its way down through the layers on its own in the oven. Stirring mixes the crust into the filling.
Can I use evaporated milk?
No. Evaporated milk is unsweetened and thin and will not set. These bars need sweetened condensed milk.
Cut them small. Somebody always comes back for three.
