My mother made the same birthday cake for every birthday in our house, in the same dented sheet pan, for as long as she could hold a mixing bowl.   • 1 cup unsalted butter (226g), softened
  • 1 3/4 cups granulated sugar (350g)
  • 4 large eggs, at room temperature
  • 1 tablespoon vanilla extract
  • 2 1/2 cups all-purpose flour (315g)
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon fine salt
  • 1 cup whole milk (240ml), at room temperature

For the chocolate fudge frosting

  • 1/2 cup unsalted butter (113g)
  • 1/3 cup unsweetened cocoa powder (28g)
  • 1/3 cup whole milk (80ml)
  • 3 1/2 cups powdered sugar (420g)
  • 1 teaspoon vanilla extract

Room temperature eggs and milk matter here; cold ones make the beaten butter seize and the cake heavy. Sift the powdered sugar if it is lumpy.

How to make yellow birthday cake

Bake the cake

  1. Heat the oven to 350°F (175°C). Butter and flour a 9 by 13 inch pan.
  2. Beat the 1 cup softened butter and the 1 3/4 cups sugar for 4 minutes, until pale and fluffy.
  3. Beat in the eggs one at a time, then the tablespoon of vanilla.

  1. Whisk the flour, baking powder and salt together. Add them to the batter in three parts, alternating with the milk in two parts, mixing on low just until smooth.
  2. Spread the batter in the pan and bake at 350°F for 30 to 35 minutes, until golden and a toothpick in the center comes out clean. Let the cake cool in the pan for 20 minutes.

Make the frosting and pour it on

  1. In a saucepan, bring the 1/2 cup butter, the 1/3 cup cocoa and the 1/3 cup milk to a boil over medium heat, stirring.
  2. Take the pan off the heat and beat in the 3 1/2 cups powdered sugar and the teaspoon of vanilla until smooth and glossy.
  3. Pour the warm frosting over the still slightly warm cake and spread it to the edges. Let it set for at least 1 hour before cutting into squares.

Tips that make the difference

  • Do not shorten the 4 minutes of beating. Set a timer; it is the difference between a light cake and a heavy one.
  • Pour the frosting while it is still warm and runny. If it thickens in the pan, warm it for a few seconds over low heat.
  • Leave the cake in the pan. A sheet cake frosted in its pan travels to any party without damage.
  • Wipe the knife between cuts for clean squares with a shiny top.

Variations

  • Layer cake. Bake the batter in two buttered 9 inch round pans for 25 to 30 minutes. Let the frosting cool and thicken for 15 minutes before spreading it between and over the layers.

Storage and make-ahead

Cover the pan and keep the cake at room temperature for 3 days. The frosting keeps the top moist.

To freeze, wrap single squares in plastic and foil for up to 2 months; thaw on the counter, still wrapped.

The unfrosted cake can be baked a day ahead, wrapped well, and frosted the next day with fresh warm frosting.

Frequently asked questions

Why does a from-scratch yellow cake taste different from a box?

Real butter in the batter, a longer beating, and no shortening or stabilizers. The crumb is richer and slightly tighter, and it tastes of butter and vanilla instead of sweetness.

Can I use cake flour?

Yes, use 2 3/4 cups cake flour (315g by weight) for an even softer crumb. The rest of the recipe stays the same.

Why did my frosting go grainy?

It cooled too much before the powdered sugar went in, or the sugar was lumpy. Beat it in right off the heat, and sift the sugar first.

Can I make it the day before a birthday?
