Every potluck supper had two tables, the salad table and the dessert table, and on the salad table, every single time, was a 9x13 pan of strawberry pretzel salad. It is not a salad. It is a three-layer dessert: a crunchy pretzel crust, a sweet cream cheese middle and a bright red strawberry gelatin top with fruit set inside it. Calling it a salad was a way for the cook to have two desserts on her plate without anyone saying a word, and half the country has been in on the arrangement for sixty years.
There is one thing that ruins it, and the recipe below prevents it. If the cream cheese layer does not reach the edges of the pan and seal against the glass, the gelatin runs down into the pretzels and turns the crust to mush. Spread the cream cheese layer all the way to the sides, press it against the pan, and chill it before the gelatin goes on. The gelatin itself should be cooled until it is syrupy and starting to thicken, not hot, so it sits on top instead of soaking through.
Why this strawberry pretzel salad works
- Baked pretzel crust. Ten minutes in the oven sets the butter and sugar around the pretzels so the crust holds and stays crunchy.
- A sealed middle. The cream cheese layer spread to the edges is a waterproof lid over the pretzels.
- Gelatin poured cool. Partly set gelatin sits on the cream cheese instead of sinking through it.
- Made the day before. Overnight the layers firm up and the flavors settle, and the pretzels are still crisp.
Ingredients
Makes one 9x13 pan, 12 to 15 squares. US cups with grams in brackets.
For the crust
- 2 cups crushed salted pretzels (200g), coarse, not powder
- 3/4 cup unsalted butter (1 1/2 sticks, 170g), melted
- 3 tablespoons granulated sugar
For the cream cheese layer
- 8 ounces cream cheese (226g), softened
- 1 cup granulated sugar (200g)
- 1 container (8 ounces, 226g) frozen whipped topping, thawed
For the strawberry layer
- 1 large box (6 ounces, 170g) strawberry gelatin
- 2 cups boiling water (480ml)
- 2 cups sliced fresh strawberries (about 1 pound, 450g), or 1 bag (16 ounces) frozen sliced strawberries
Crush the pretzels in a bag with a rolling pin until they are the size of small peas. Fine crumbs make a dense, greasy crust.
How to make strawberry pretzel salad
The crust
- Heat the oven to 350°F (175°C). Stir the crushed pretzels, melted butter and sugar together and press firmly into the bottom of a 9x13 baking dish.
- Bake for 10 minutes. Cool completely on a rack. The crust must be cold before the next layer.
The cream cheese layer
- Beat the cream cheese and sugar together until smooth and fluffy, about 2 minutes. Fold in the whipped topping until no streaks remain.
- Spread the mixture over the cooled crust, pushing it all the way to the edges and pressing it against the sides of the dish so the crust is completely sealed. Refrigerate for at least 30 minutes.

The strawberry layer
- Stir the gelatin into the boiling water until fully dissolved, about 2 minutes. Add the strawberries. If using frozen berries, they will cool the gelatin quickly; if fresh, let the mixture stand at room temperature for 20 to 30 minutes, until it is syrupy and starting to thicken but still pourable.
- Pour the gelatin gently over the cream cheese layer, spooning it around the edges first. Spread the strawberries evenly.
- Refrigerate for at least 4 hours, preferably overnight, until fully set. Cut into squares with a sharp knife and lift out with a spatula.

Tips that make the difference
- Chill the cream cheese layer before pouring the gelatin. A firm middle is a better seal.
- Pour the gelatin over the back of a spoon so it does not dig a hole in the cream cheese.
- Serve within 2 days. After that the pretzels slowly soften, which some people do not mind at all.
- Wipe the knife between cuts for clean squares.
Variations
- Raspberry. Use raspberry gelatin and fresh raspberries.
- Real whipped cream. Whip 1 1/2 cups heavy cream with 3 tablespoons powdered sugar to stiff peaks and use in place of the whipped topping. Serve within a day.
- Peach. Peach gelatin with sliced ripe peaches, a late-summer version.
- Individual. Layer in small jars or cups for a potluck. Bake the crust on a sheet pan and spoon it in.
Storage and make-ahead
Cover and refrigerate for up to 3 days. The pretzel crust is crunchiest on day one and still good on day two.
It does not freeze; the gelatin weeps and the crust goes soft when thawed.
To transport, keep it cold in the pan and cut it at the table.
Frequently asked questions
Why is it called a salad?
Because it was served on the salad table at potluck suppers and potlucks, next to the gelatin molds, and nobody wanted to be the one to point out it was a dessert. The name stuck.
Why did my pretzel crust get soggy?
The gelatin leaked into it. The cream cheese layer must be spread to the very edges and sealed against the sides of the pan, and the gelatin must be cooled and partly thickened before it is poured on.
Can I use sugar-free gelatin and whipped topping?
Yes. Use sugar-free strawberry gelatin and a light whipped topping, and reduce the sugar in the cream cheese layer to 3/4 cup. The texture is nearly identical.
Can I make it a day ahead?
You should. It needs at least 4 hours to set and it is at its best after an overnight chill, as long as the layers were sealed properly.
