6 large eggs

2 tbsp mayonnaise

1 tbsp Greek yogurt or sour cream

1 tsp lime juice

⅓ cup cooked corn kernels

1 tbsp cotija or feta cheese

½ tsp chili powder

⅛ tsp cayenne (optional)

1 tbsp cilantro, chopped

1 tsp green onion, chopped

Salt & pepper, to taste
Instructions

Boil eggs 10–12 min; cool and peel.

Halve eggs; remove yolks.

Mash yolks with mayo, yogurt, lime juice, and spices.

Stir in corn, cilantro, and half the cheese.

Pipe into egg whites; top with cheese, chili powder, and cilantro.
Notes

Drain corn well to prevent watery filling.

Adjust chili to taste.

Serve chilled for best texture.

Use feta if cotija unavailable.
