5-Step Irresistible Elote Deviled Eggs – Creamy, Spicy & Full of Flavor

Ingredients

  • 6 large eggs

  • 2 tbsp mayonnaise

  • 1 tbsp Greek yogurt or sour cream

  • 1 tsp lime juice

  • ⅓ cup cooked corn kernels

  • 1 tbsp cotija or feta cheese

  • ½ tsp chili powder

  • ⅛ tsp cayenne (optional)

  • 1 tbsp cilantro, chopped

  • 1 tsp green onion, chopped

  • Salt & pepper, to taste


Instructions

  • Boil eggs 10–12 min; cool and peel.

  • Halve eggs; remove yolks.

  • Mash yolks with mayo, yogurt, lime juice, and spices.

  • Stir in corn, cilantro, and half the cheese.

  • Pipe into egg whites; top with cheese, chili powder, and cilantro.

Notes

  • Drain corn well to prevent watery filling.

  • Adjust chili to taste.

  • Serve chilled for best texture.

  • Use feta if cotija unavailable.
