A vibrant, flavorful salad combining crispy, spicy-honey coated chicken with fresh avocado, crisp greens, vegetables, and a creamy lime dressing. Sweet, spicy, and refreshing.
Ingredients
For the Chicken

8 breaded chicken tenders (or 24 chicken nuggets)

¼ cup honey

¼ cup avocado (or olive) oil

¼ tsp ground ginger

¼ tsp garlic powder

¼ tsp cayenne powder

2 tsp chili powder
-
½ tsp salt (plus pepper to taste)
For the Salad

2 heads romaine lettuce, chopped

½ red onion, diced
-
1 avocado, diced
-
2 green onions, chopped
-
¼ cup cilantro, chopped
-
½ cup shredded carrots
-
¼ jalapeño, finely chopped & deseeded

Juice of ½ lime
For the Dressing

⅓ cup creamy cilantro-lime dressing (or similar)
Instructions

Cook chicken (oven or air fryer). Meanwhile, chop all salad vegetables and place in a large bowl.

Make the spicy honey sauce: In a bowl, mix honey, oil, ginger, garlic powder, cayenne, chili powder, and salt.

Coat the chicken: Dice cooked chicken, toss it in the honey sauce until well coated.

Assemble salad: Add the coated chicken into the bowl of salad ingredients. Drizzle with the creamy dressing and a squeeze of lime juice. Mix gently.
