- 2 cups sliced peeled potatoes

- 1 cup water
- 2 (10.75 oz) cans condensed cream of mushroom soup, undiluted
- 1 (5 oz) can chow mein noodles, divided
- 1 cup shredded cheddar cheese
Instructions
- Preheat and Prepare:
Preheat oven to 350°F (175°C). Grease a 2-quart baking dish. - Brown the Beef:
In a large skillet over medium heat, cook the ground beef until browned and cooked through. Remove from skillet and set aside. - Sauté Vegetables:
Using the same skillet, melt butter. Add sliced potatoes, celery, carrots, green bell peppers, and onions. Sauté for 5 minutes. - Simmer Vegetables:
Add water, cover, and simmer vegetables for 10 minutes until tender. - Mix Ingredients:
In a large bowl, combine the browned beef, sautéed vegetables, and undiluted cream of mushroom soup. Stir until well mixed. - Layer the Dish:
Spread half of the chow mein noodles in the bottom of the prepared baking dish. Top with the beef and vegetable mixture, spreading evenly. - Initial Bake:
Cover with foil and bake for 20 minutes. - Add Toppings:
Remove foil and sprinkle shredded cheddar cheese and remaining chow mein noodles on top. - Final Bake:
Return to the oven, uncovered, and bake for an additional 10–12 minutes, until the cheese is melted and bubbly. - Serve:
