  • 2 tbsp chili oil
  • 1/2 cup cream
  • 1 large red onion, thinly sliced
  • 3 tbsp olive oil
  • 34 garlic cloves, finely chopped
  • 1 tbsp Italian seasoning
  • Salt to taste (about 1–2 tsp)
  • Optional: Parmesan cheese, chopped parsley for garnish

Instructions

  • Prepare the Ingredients: Slice the red onion thinly and finely chop the garlic.
  • Cook the Pasta: Bring a pot of water to a boil, add 2 tsp of salt, and cook the spaghetti according to package instructions. Reserve 1 cup of pasta water before draining.
  • Caramelize the Onions: Heat 3 tbsp olive oil in a pan over medium heat. Add the sliced onions and cook for 6–7 minutes, stirring occasionally, until golden and caramelized.
  • Add Garlic and Chili Oil: Stir in the chopped garlic and sauté for 1–2 minutes until fragrant. Add the chili oil and mix well.
  • Make the Sauce: Lower the heat and pour in the cream. Add the Italian seasoning and salt to taste. If the sauce is too thick, add a splash of reserved pasta water to loosen it.
  • Combine with Pasta: Add the cooked pasta to the pan and toss until evenly coated with the sauce.
  • Garnish and Serve: Top with grated Parmesan and chopped parsley, if desired. Serve immediately and enjoy!
